Throughout our journey, we discovered that the high histamine content in most fish condiments was a concern, especially for those with allergies. By innovating the fermentation process, we reduced histamine levels—making Ozen safer and more enjoyable for all.
This breakthrough was personally motivated by my two nephews, who are sensitive to allergens in traditional sauces. We wanted to create Pure Natural products that everyone could enjoy worry-free.
